Here is my adaptation on her original recipe, which can be found here!
3 cups of regular flour
4 teaspoons of baking powder
1 teaspoon of salt
1 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
1 cup of sugar
1 cup of regular milk
1/2 cup of canola oil
1/2 teaspoon of vanilla extract
2 cups of semi-sweet chocolate chips
Preheat the oven to 425 degrees.
In a large bowl, mix your dry ingredients together evenly. In another large bowl, whisk your eggs in the bowl first, and then add your wet ingredients slowly and whisk as you add them. Then grab your dry ingredients, and add those in slowly as you whisk them. Don't whisk TOO much, but enough that you can clearly see that the ingredients are evenly distributed in the bowl. Finally, add the chocolate chips in and do NOT whisk them in, but rather, use a large tablespoon to swirl them around.
Also, be sure to leave a few chips out, so you can sprinkle a few more on the tops of the muffins once you put the batter into the tray. Grab a non-stick muffin tray and pour the batter in almost all of the way up. Sprinkle the excess chocolate chips on top.
