Southwestern Breakfast Sandwich



What You'll Need:

  • 2 eggs
  • Mexican cheeses
  • Mushrooms
  • Minced Onions
  • Jalapenos (optional)
  • Olive oil
  • Hot sauce
  • Whole wheat, English muffin

Beat the eggs in a bowl. Saute the mushroom and onions in the pan with a little bit of olive oil you will cook the omelette in for about 2-3 minutes or until brown. Pour the egg in and then cover with a bit of cheese. Cook the omelette to your liking and while you are doing that, toast the English muffin (or bagel will work too!) simultaneously. Once the omelette is done and the muffin is toasted, place a slice of the omelette on one half of the muffin and sprinkle it with a bit more cheese. Then, coat the second half of the muffin in hot sauce. Bake in a conventional oven for about 4-5 or long enough that the cheese are melted and the hot sauces has seeped into the muffin a bit.
