Ingredients:
-
- 1 cup flour
- 1/2 teaspoon salt
- 2 tablespoons cocoa powder
- 1 stick of butter room temperature
- 1 1/4 cup of granulated sugar
- 2 eggs room temperature
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 teaspoon white distilled vinegar
- 1 teaspoon baking soda
- Wilton Red (no-taste) Icing Color add 1/2 teaspoon at a time until desired color is achieved
- Frosting:
- 1 cup cream cheese
- 1 cup mascarpone cheese
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1 1/2 cup double cream
Directions:
- 1. Preheat oven to 350.
- 2. Soften the butter in a large mixing bowl, and then mix in the sugar until it's light and fluffy.
- 3. Mix the flour, salt, and cocoa powder in a separate bowl.
- 4. Beat in 1 egg at a time into the butter & sugar bowl. Add in vanilla extract.
- 5. Pour half of the butter milk into the butter & sugar mixture, and then the other half into the flour bowl.
- 6. In a small separate bowl, combine vinegar and baking soda. Let it fizz for a moment, then combine with butter & sugar bowl.
- 7. Continue beating butter & sugar bowl, and add in the flour/salt/cocoa butter bowl and keep mixing.
- 8. Pour contents of your batter into your cupcake tins and let it sit untouched for 5 minutes.
- 9. Bake cupcakes at 350 for 15-18 minutes, or until you can insert a butter knife into center of a cupcake and pull the blade out clean.
- 10. Once finished, remove from oven and cool in the fridge/freezer.
- 11. For frosting, beat cream cheese and mascarpone until smooth. Add in vanilla and sugar.
- 12. Continue beating it until smooth, and then add in double cream until desired consistency.
Add adorable, pink candy hearts to your cupcakes!
Give them some Valentine's flair!
Here's how I made them:
Take a silicon, ice cube tray and fill each one with 3 Wilton's candy melts. Melt in it the microwave on defrost mode for 1 minute and 30 seconds. Take the tray out carefully (will be hot) and tap it on the counter to spread the melt out. Once the candy is melted and spread throughout each hole, put in the freezer for 1 hour.

Yum yum yum!!! Those look amazing!! I like your idea of how to make the candy melts, too! Whenever I've made candy I've done the whole thing on the stove top but your way is much better!!!
