Our Fave Bruschetta


  • We'd be lying to ourselves if Adam and I said we didn't have an obsession with bruschetta--it's like our go-to treat for a lazy, Sunday afternoon! There is this place in Gilbert that we love called Postino's, and it's pretty expensive to frequent more than once a month. The first time we left Postino's, I needed to find a way to mock what they gave us--their heavenly bruschetta left me wanting more, so we came up with this pseudo-Postino's recipe!

  • Ingredients:
    • 1 very thin loaf of bread
    • 2 tablespoons garlic powder
    • 1/2 cup chopped parsley
    • 1 lg red bell pepper
    • 1 tablespoon oil
    • 1 tablespoon vinegar
    • 1 cup of goat cheese
  • Directions:

    1. 1. Cut the loaf of bread into slices about 1/2 inch thick
    2. 2. Sprinkle a bit of garlic powder onto the slices
    3. 3. Toast in a conventional oven for about 2 mins--or until it is toasted to your liking
    4. 4. Dice the bell pepper and pour into a bowl
    5. 5. Add in the oil and vinegar and parsley and mix
    6. 6. Spread the goat cheese evenly onto the slices
    7. 7. Using a spoon, sprinkle the bell peppers onto the slices
