We'd be lying to ourselves if Adam and I said we didn't have an obsession with bruschetta--it's like our go-to treat for a lazy, Sunday afternoon! There is this place in Gilbert that we love called Postino's, and it's pretty expensive to frequent more than once a month. The first time we left Postino's, I needed to find a way to mock what they gave us--their heavenly bruschetta left me wanting more, so we came up with this pseudo-Postino's recipe!
- Ingredients:
- 1 very thin loaf of bread
- 2 tablespoons garlic powder
- 1/2 cup chopped parsley
- 1 lg red bell pepper
- 1 tablespoon oil
- 1 tablespoon vinegar
- 1 cup of goat cheese
Directions:
- 1. Cut the loaf of bread into slices about 1/2 inch thick
- 2. Sprinkle a bit of garlic powder onto the slices
- 3. Toast in a conventional oven for about 2 mins--or until it is toasted to your liking
- 4. Dice the bell pepper and pour into a bowl
- 5. Add in the oil and vinegar and parsley and mix
- 6. Spread the goat cheese evenly onto the slices
- 7. Using a spoon, sprinkle the bell peppers onto the slices

Yum! I recently discovered bruschetta and ate pretty much the entire tray by myself at a get-together. It's probably about time I make some myself- thanks for sharing the recipe!

I might have to try this recipe. My husband had tried to make brushetta a few times. It seems there's so many variations of recipes out there. We just have to find one we like
