So, it's Thursday. We're nearly through the week and I dunno about you all, but we need a little pick me up!
We've had a lot of housekeeping items to attend to (both in the house, and metaphorically speaking), so Adam and I haven't had a lot of downtime to relax together since he's come back from his trip over Easter weekend. There's been a lot to get done, and sometimes I just feel like I am way in over my head. Do you ever feel that way? Sometimes, I just don't know what to do with myself when I am stressed out from having what feels like a never-ending to-do list.
No matter what the question is you're asking yourself, chocolate is always a plausible answer!
I have to say, sometimes I'm not feeling super inspired to come up with a fabulous dessert recipe. But then, there are those moments when I am just really craving something sweet (but would rather not just go buy something at the store, or get takeout).

Her CaramelPecan Walnut {Turtle} Brownies were my inspiration. I baked my brownies loosely off of her recipe, and I substituted pecans for walnuts (because Adam is not a huge fan of pecans).

Now, what you see here is the aftermath of having a slice of brownie. I am not going to lie to all of you: before I had this brownie, I was super hangry! But once I dug in and had some, I started to feel better and that's when I had a thought: how cute would these be as cakettes? One really easy way to convert your cake or brownie into a cakette is to use a mason jar top as the cutout (cookie cutters also work, but I have an excess amount of clean, unused mason jar tops lying around).
I cut out a few chocolate caramel and walnut cakettes, and then went even more nuts (ha! that's punny) and added on some extra caramel drizzle.
OH MY YUM! I literally can't even.
So, if you like chocolate and caramel, I cannot recommend this enough! You will die over it.
I am so excited for tomorrow, because that means that it's Friday and the weekend is almost here! Adam and I are going to spend some quality time together and make up for the holiday apart from one another.
