Spring Picnic Date Night Inspiration

Last week, Adam flew back East to visit his family (and our new niece!) for Easter. Anytime we have to separate even for a few days, Adam and I like to have a date before we part ways for a while. The weather here in Phoenix has been so gorgeous, so I thought it would be a nice idea for the two of us to have a little picnic! Lately I've been craving homestyle, country cooking, so I wanted to come up with a Springtime twist on an old fashioned cornbread recipe my grammy and I used for years.



Blueberry Cornbread
Ingredients:

  • 1 cup of cornmeal
  • 3/4 cup of baking flour
  • 1 tablespoon of fine sugar
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 3/4 stick of unsalted butter
  • 2 large eggs, partially beaten
  • 1 1/2 cups of skim milk
  • 1 cup of fresh blueberries
First, you'll want to combine your dry ingredients in a mixing bowl. 


When a cornbread recipe calls for eggs, it's best to only partially beat them. To be honest, I am not entirely certain as to why this is but my grammy told me years ago that you're only supposed to partially beat your egg! (thanks for the tip, Gram!)


Add in the remainder of your ingredients and mix well. Optional: if you want to add blueberries like I did, add in about 1 cup of blueberries to your mixed batter.


Bake your cornbread at 425 degrees (Fahrenheit) in a non-stick cake pan (or 2 bread loaf pans like we do). If you are baking in a round/rectangle cake pan, bake for 20-25 minutes. If you are baking in 2 bread loaf pans like we are, bake for 16-20 minutes (check often and remove them from the oven when the tops are golden brown). Enjoy!


This blueberry cornbread is great for an on-the-go treat. I took it on my picnic with Adam and we loved it!


I don't know about you, but I crave lemonade with my cornbread. It's so refreshing!

What's really neat too is you can opt to either make it in a pitcher, or you can even make it for just a glass as well; the Country Time Lemonade Starter either makes 6 quarts or 3 pitchers depending on what you prefer. I just wanted some mason jar glasses, since it would be just me and Adam having our own little romantic picnic. 


This berry lemonade is the perfect Springtime drink for me! And I love adding fresh berries and lemon slices to it as well. Adam thought it was pleasantly sweet and a very refreshing drink, too!

  3. Frozen water bottles so they unfreeze and are very cold then they can be mixed or drank plain, tossed salad, burgers for the grill, chips, a cold salad and good company. Sounds like a great picnic to me.

  4. I really love a good picnic. I would probably bring along potato salad, because it's my favorite bbq/picnic side. Unfortunately my husband hates the stuff :-(
