As many of you know, Adam and I are still recovering from our amazing wedding anniversary vacation
we just had. Finding
the energy to make dinner has been difficult to say the least, so this week I'm focusing on preparing meals that don't require me to go out of the way to go on a crazy shopping trip. Last night, Adam and I had the most delicious Smithfield
® Garlic & Herb Pork Sirloin on the grill--with a side of potatoes that only needed 5 ingredients!
Adam and I spent some time after work sitting in the kitchen, and we talked about how our days were as we cleaned and cut our potatoes and onions. It's always way easier to make dinner when we're both working together on the meal prep--and it's nice to take the time to discuss what we did that day before we both zone out and just relax at the pool or in front of the tv.
These potatoes were so easy to cook on the grill with our pork, too!
Easy Potatoes on the Grill
Ingredients:
- 4-5 medium-sized russet potatoes
- 1/2 of a large sweet onion
- 2 tablespoons of olive oil
- 1 tablespoon of garlic powder
- 1/2 tablespoon of ground rosemary
Directions:
- Skin and rinse off the potatoes. Dry and set aside.
- Chop up half of a sweet onion, and then chop up the potatoes.
- Combine the olive oil, garlic powder, and ground rosemary in a small bowl. Mix.
- Dredge the potatoes and onions in the olive oil mixture, and then toss them in aluminum foil.
- Fold the aluminum foil over the top, but do not wrap or seal tightly. You will want some airspace to get in, so that you can create and release steam as the potatoes cook on the grill.
- Grill for about 25-30 minutes, or until your onions look tender.
- Remove from the grill when they are done, and serve alongside your favorite meat entrée!

ReplyDeleteI'm not sure how it would work in the oven with the aluminum foil, but you could omit the foil altogether and bake them in the oven in a skillet!
