Prickly Pear Chardonnay con Pico de Gallo

One of my favorite things about living in the Southwest is the cuisine! Living here in Phoenix, it feels like summer almost all year long. One of my favorite things about the warm weather is the yummy drinks and zesty snacks by the pool--today, I'm sharing a drink recipe for a Prickly Pear Chardonnay drink (alcohol removed), as well as a Pico de Gallo recipe!

Pico de Gallo
Ingredients:
  • 1 cup of diced plum tomato
  • 1/2 dup of diced white onion
  • 1 small jalapeño 
  • A palm-full of cilantro sprouts
  • 1 tablespoon of lime juice

Directions:
  1. Wash, de-seed, and then dice up your plum tomatoes. 
  2. Skin and dice your white onion.
  3. Wash, de-seed, and then chop up your jalapeño into small slices.
  4. Chop up the cilantro sprouts, and then combine all ingredients in a bowl and mix.
  5. Serve chilled and enjoy--it tastes amazing with fresh tortilla chips!

Since it's Friday, Adam and I will be kicking off the weekend with some drinks and snacks! But since I don't want to necessarily feel the aftermath of enjoying a few cocktails, we will be sharing a Prickly Pear Chardonnay drink with Fre Alcohol-removed wine. I like that I'm able to enjoy the same fruity cocktail, just except with Chardonnay with the alcohol removed. If you're a fan of mocktinis, then Fre Alcohol-removed wine is a great product to keep on hand! And this drink size is perfect for two--hubby and I each had our own straw and sipped on this yummy drink by the pool. It was awesome--it was like our very own spin on a scorpion bowl drink.


Prickly Pear Chardonnay
Ingredients:
  • 5 fluid ounces of Fre Chardonnay
  • 5 fluid ounces of prickly pear juice
  • 2 fluid ounces of grenadine syrup
Directions:
  1. Combine all ingredients into the large bowl and stir. Serve chilled (or with ice) and enjoy!

When I first tried Fre Alcohol, I honestly had no idea how it was made. They actually have this process called de-alcoholization, where the winemakers use this revolutionary spinning cone column to remove alcohol while preserving the delicate fragrances and flavors of the wine. The finished product is a fresh, delicious beverage with all of the characteristic aromas and flavors of premium wine, but with less than 0.5% alcohol and half the calories of traditional wine. Neat, right?! I thought it was pretty cool and hadn't ever heard of anything like that before. The end result has less than one half of one percent of alcohol remains in the wine.

  1. I actually JUST spotted fre in my grocery store and I thought, hmmm, why would I buy that? But you're right! I love wine but alcohol makes me sick, so I've been going without for a long time...why wouldn't I just try it without the alcohol? Duh! Btw, I've never tried pico de gallo, can you believe it??

  8. I could put pico de gallo on just about everything, so this is a recipe I would get a lot of use out of. Not a chardonnay person though, but the drink it pretty.

  15. I haven't seen or tried these yet. I can definitely think of times I would like to celebrate, but was not in the mood for falling asleep afterwards (alcohol makes me so sleepy! *yawn*). This would be fun to bring out for a game night with friends.
