30-minute meals help keep me sane.
With both of our very busy (and also very different) schedules, Adam and I hardly have dinner together these days. And it's frustrating. We both work from home, and honestly, sometimes it just seems crazy that we can't sit down to have a meal together! Through a little trial and error, I have figured out that 30-minute meals are the best shot at having a sit-down dinner together. Talking about my day and spending time with Adam helps me feel sane. It helps me center myself and reboot for another work day.
Cooking a wholesome dinner for the two of us to enjoy is something that I really enjoy, and this Sauteed Mushroom and Ginger Snap Peas 30-minutes recipe I am sharing today has "Real Flavor Real Fast!"
This recipe for Sauteed Mushroom and Ginger Snap Peas serves perfectly with Smithfield® Portobello Mushroom Loin Filet!
Sauteed Mushroom and Ginger Snap Peas
*Serves 2
Ingredients:
- 1 1/2 cups of snap peas
- 1 1/2 cups of portobello mushrooms
- 1 tablespoon of olive oil
- About 3 tablespoons of chopped ginger
- 1 tablespoon of onion powder
Directions:
- Chop up and dice the ginger and then combine it with olive oil and onion powder.
- Wash the snap peas and mushrooms, and then chop up the mushrooms.
- Heat a large stovetop pan on medium-high heat, and add a small amount of olive oil to the pan.
- Toss the snap peas and mushrooms into the pan along with the diced ginger/onion/olive oil. Mix well.
- Sautée the vegetables in the pan.
- Enjoy the sautéed mushroom and ginger snap peas alone, or pair with a portobello mushroom-flavored loin filet.

Smithfield® Portobello Mushroom Loin Filet is so tender and flavorful, and it was so easy to prepare for dinner! I roasted the loin filet in the oven while I made the Sauteed Mushroom and Ginger Snap Peas (and once the mushroom and snap peas were done I tossed them into the roasting pan with the loin filet to let the veggies soak up the juice from the loin--so delicious!)

I like to pick up my Smithfield® Marinated Fresh Pork while I am at Walmart doing my grocery shopping--all of the different tenderloins, loin filets, and roasts are great when I'm preparing a 30-minute dinner for me and Adam throughout the week.
