
With both of our very busy (and also very different) schedules, Adam and I hardly have dinner together these days. And it's frustrating. We both work from home, and honestly, sometimes it just seems crazy that we can't sit down to have a meal together! Through a little trial and error, I have figured out that 30-minute meals are the best shot at having a sit-down dinner together. Talking about my day and spending time with Adam helps me feel sane. It helps me center myself and reboot for another work day.
Cooking a wholesome dinner for the two of us to enjoy is something that I really enjoy, and this Sauteed Mushroom and Ginger Snap Peas 30-minutes recipe I am sharing today has "Real Flavor Real Fast!"
This recipe for Sauteed Mushroom and Ginger Snap Peas serves perfectly with Smithfield® Portobello Mushroom Loin Filet!
- 1 1/2 cups of snap peas
- 1 1/2 cups of portobello mushrooms
- 1 tablespoon of olive oil
- About 3 tablespoons of chopped ginger
- 1 tablespoon of onion powder
- Chop up and dice the ginger and then combine it with olive oil and onion powder.
- Wash the snap peas and mushrooms, and then chop up the mushrooms.
- Heat a large stovetop pan on medium-high heat, and add a small amount of olive oil to the pan.
- Toss the snap peas and mushrooms into the pan along with the diced ginger/onion/olive oil. Mix well.
- Sautée the vegetables in the pan.
- Enjoy the sautéed mushroom and ginger snap peas alone, or pair with a portobello mushroom-flavored loin filet.
