Southwestern Pulled Pork Sandwiches with Adobo Sauce


This Southwestern-inspired pulled pork sandwich features adobo sauce, avocado, red cabbage, and lime juice. I've partnered with Pepperidge Farm to share this recipe with you today!


Springtime in the desert here in Phoenix usually means everyone is doing a lot of outdoor grilling! This past weekend, however, the valley was very cloudy and we even got some heavy rain and thunderstorms. I was totally bummed that the weather wasn't cooperating for an outdoor picnic by the grill at the pool, but Adam and I still found a way to enjoy one of our favorite Southwestern picnic dinners.

Southwestern Pulled Pork Sandwiches with Adobo Sauce unite some of our favorite flavors inspired by the culture here in Phoenix. We really enjoy bringing a Southwestern spin to picnic-inspired recipes (like our Southwestern Cole Slaw recipe). Today I'm sharing this sweet and savory sandwich recipe that balances a mix of classic sandwich ideas with some Southwestern flavor, and I've partnered with Pepperidge Farm to share a giveaway with you!



Southwestern Pulled Pork Sandwiches with Adobo Sauce
*Makes about 4 sandwiches

Ingredients:
  • 4 cups of pulled pork 
  • 1 cup of adobo sauce
  • 1 cup of red cabbage
  • 1 avocado
  • 1/2 lime
Directions:
  1. Prepare your pulled pork as you normally would. My favorite go-to recipe is from The Kitchn and you can see their recipe here
  2. Once you've cooked your pulled pork, toss it in some adobo sauce. Chill in the refrigerator for 30 minutes or more.
  3. When you're ready to prepare your sandwiches, chop up some red cabbage and put a handful on top of the bottom bun of your sandwich bread. Top the cabbage with some juice from a lime. 
  4. Scoop about 3/4 to 1 cup of adobo pulled pork on top of the sandwich.
  5. Slice an avocado and put 2-3 pieces on top of each sandwich. 
  6. Enjoy!
