Taco Lasagna Skillet

Melted cheese, beef, refried beans, and salsa stacked between layers of tortilla--this taco lasagna skillet is an easy comfort food dinner! Thanks to Herdez® for partnering with us!

Yesterday, Adam and I worked all morning and night and when we finally finished our work for the day we both just looked at each other and agreed we wanted to have something easy and comforting for dinner.

If you follow me on Snapchat, chances are you have already seen this! I shared the recipe tutorial as we were making it on my Snapchat story yesterday, and everyone was loving it. I cannot tell you how many drooling Bitmoji responses I got and so many people were asking when the recipe was going to be on the blog. Well, today's the day! 

This taco lasagna skillet is so easy to make and has everything I love about a regular taco all packed into layers and layers of warm and carb-o-licious tortillas! 

Taco Lasagna Skillet

  • 5-6 small tortillas (small or fitted to size of your skillet)
  • 1 pound of cooked hamburger
  • 1 1/2 cups of red salsa + 1/4 cup of salsa
  • 1 cup of shredded Mexican cheese + 1/4 cup shredded Mexican cheese (or 1:1 ratio of cheddar and Monterey jack cheese)
  • 1 package of prepared Herdez® Instant Refried Beans (or 4 servings of your favorite, traditional refried beans)
  1. Pre-heat the oven to 350 degrees (F).
  2. Spray coconut oil (or your preferred non-stick cooking oil) into a skillet. 
  3. Combine the cooked hamburger with the 1 1/2 cups red salsa. 
  4. Lay one tortilla in the center of the skillet so that it lays flat.
  5. Pour about 1 cup of the cooked hamburger and salsa mix on top of the tortilla. 
  6. Top about 1/2 cup of refried beans on top of that, and then finally add a small handful of cheese.
  7. Lay another tortilla on top, and use your hands to flatten the tortillas. Repeat this process for 4 more tortillas, or until the stack is as high up as the sides of the skillet.
  8. For the final tortilla, spread about 1/4 cup of salsa on top and then finish with 1/4 cup of shredded cheese. 
  9. Bake the skillet in the oven at 350 degrees (F) for 15 minutes, or until the cheese is completely melted. 
  10. Serve hot and enjoy! Top with any of your favorite taco fixings!
