Chocolate Pumpkin Breakfast Shake

Monday mornings have felt like a drag lately. Right now, Adam and I are scheduling ourselves to work Saturdays and Sundays, so now our Mondays actually feel like Wednesdays. So, it definitely feels like we are only half way through our work week, and our workload has not gotten any smaller. Luckily, I have got a little extra pep in my step this morning! 

I am in a good mood on this Monday morning because of two reasons; one reason being that my mom comes into town in a few days and I am very excited to see her, and two being that I have been having chocolate for breakfast the last couple of days! Today, I'm sharing this yummy breakfast shake recipe I have been enjoying lately to help me get into the fall spirit! This chocolate pumpkin breakfast shake recipe is sweet, nutritious, and has less than 375 calories and 30g of sugar per serving.

Chocolate Pumpkin Breakfast Shake

Ingredients:
  • 1 cup of pumpkin puree
  • 1/2 ounce of unsweetened milk chocolate
  • 1 cup of skim milk
  • 2 tablespoons of ground flax seed
  • 1 Carnation Breakfast Essentials® Light Start™ packet in chocolate
Directions:
  1. Using a mixer/food processor machine, chop up the chunks of unsweetened milk chocolate into smaller pieces. 
  2. Pour the milk in with the chopped up chocolate, and blend on "milkshake/smoothie" setting until it appears to look like chocolate milk. 
  3. Scoop in the pumpkin puree, and blend everything in the mixer on a medium speed setting until you achieve a shake texture. 
  4. Open up a packet of Carnation Breakfast Essentials® Light Start™ in chocolate, and pour it into the mixer and blend on "milkshake/smoothie" setting speed until you no longer see any more powder.
  5. Finally, pour in the flax seed and blend on the medium speed setting for upwards of 30 seconds (this will help ensure all of the ingredients are well-mixed together). 
  6. Serve chilled and enjoy!

The Carnation Breakfast Essentials® Light Start™ that I used to make this shake is a new product, and I've been wanting to try it for some time now; I am used to having the regular Carnation Breakfast Essentials® packets, since they are usually my go-to powder for most of the smoothies and shakes that I make (including this  chocolate pecan pie smoothie recipe that I shared on the blog last year). 


I really like the new, Carnation Breakfast Essentials® Light Start™ because it has less calories and sugar, so I can add in more chocolate than I normally would have before! You can also use the Carnation Breakfast Essentials® Light Start packets to improve other breakfast staples such as coffee, smoothies, baked goods, etc. 

Adam and I currently have the Carnation Breakfast Essentials® packets in Strawberry and Carnation Breakfast Essentials® Light Start™ in chocolate in our pantry right now, and I'm already brainstorming even more ways to use them (I am thinking I'll bake them into some muffins for some added protein!) Breakfast is the most important meal of the day after all, and if I am in a hurry to whip up something really fast before I head out the door to run errands in the morning I'll try to add in some Carnation Breakfast Essentials® to get some much-needed nutrition in at the start of my day.

  15. Mmmmm, this looks so yum! I haven't thought about adding pumpkin into my breakfast, but a pumpkin breakfast shake sounds absolutely divine! My husband isn't a huge breakfast person, so I'm always trying to spice things up a little-I think this will be a great treat! Thanks for sharing <3
