Ironically enough, Adam and I got a ton of work done over labor day weekend!
Ingredients:
- 4 large bell peppers
- 1 large yellow onion
- 1 1/2 cups of sliced mushrooms
- 8 servings of pre-cooked sliced beef or beef steak (we prefer Castle Wood Reserve® Angus Seasoned Roast Beef Top Round since we almost always have it in our fridge)
- 8 servings of Castle Wood Reserve® Natural Pepper Jack Cheese
- Pre-heat the oven to 375 degrees (F) and heat up a large stovetop skillet to medium heat.
- Chop up the mushrooms and yellow onion, and sauté them in the stovetop skillet in coconut oil (or your preferred method to sauté).
- Carve the center and seeds out of the bell peppers, and stuff them with slices of beef and cheese. Stuff the cooked mushroom and onion into the peppers, and top with more beef and cheese as needed.
- Heat the peppers in the oven for 20-25 minutes or until the cheese is completely melted.
- Serve immediately and enjoy!

ReplyDeleteI need to add these to our dinner rotation. I have only had regular stuffed peppers with ground beef but these are such a great idea to mix it up a little.
