Spicy Queso Football Dip

When we all get together on game day, we always enjoy lots of delicious and cheesy appetizers while we sit around the tv and watch the game! Whether we're making some chorizo cheese fries or maybe even some bacon and cheese tater tots, I always plan to buy a grocery cart filled with an assortment of cheeses I can cook with. 

When I was shopping at Fry's earlier this week, I picked up a handful of cheese and grabbed some jalapeños and peppers for this recipe! This spicy, queso dip is perfect for game day--it's rich, packed with flavor, and pairs perfectly with the rest of your football food favorites!

Spicy Queso Football Dip

Ingredients:
  • 1 lb of pepper jack cheese
  • 1/2 lb of Colby jack cheese
  • 1 1/2 cups of jalapeños, sliced 
  • 1 1/2 cups of assorted peppers, sliced
  • 3/4 cups of green onions, chopped
Directions:
  1. Chop up and prepare all of your jalapeños, peppers, and onions.
  2. Using a cheese grater, grate all of the cheese onto a large plate.
  3. Heat a medium-sized stovetop pan to a low-medium heat, and then spray a small amount of coconut oil/olive oil into the pan to prevent the cheese from sticking to the bottom/sides.
  4. Once the pan has been heated, pour about half of the cheese into the pan.
  5. Mix the cheese until it's almost completely melted, and then add in the second half of the cheese. 
  6. Continue mixing the cheese until it's melted and adjust the heat as needed. The cheese should start to bubble once it's reached a liquid form, and once it is a liquid form pour in the jalapeños, peppers, and green onions.
  7. Keep the queso on medium heat until you are ready to serve it, and then serve immediately! 
  8. If you have leftovers, we recommend spraying an oven-safe container with coconut oil first and then pouring the remaining queso into the container to store it until it's ready to be heated and served again.

If you like a crunchier bite to eat with your dip, I recommend pairing this queso recipe with the original Wheat Thins. If you prefer a softer cracker with a little bit of added salt to taste with your queso, try dipping in some original RITZ. Or if you are like me and you can't make up your mind which you like better, you can go for both! 

No matter what you decide to pair with this spicy queso dip, reach for some Coca-Cola to enjoy with it! Be sure to head to your local Fry's or Kroger store to pick up everything you will need for game day!
