Slow Cooker French Onion Soup

Last week, Adam found out that he will have the day off on Thanksgiving and I couldn't be more excited!

The holidays are stressful for our family because, more often than not, Adam has a lot of mandatory overtime he is required to work and oftentimes these extra shifts he has to work fall right on a holiday. So when we found out he will have the day off, we were both so elated to know that we would be able to spend time together on Thanksgiving Day!


Since I'll be spending every minute I can with my hubby during the holidays (before work steals him away), I like to utilize my slow cooker so that I can really cut back on the time I spend preparing meals. Today, I'm sharing my go-to, slow cooker french onion soup recipe.
This soup warms me right up and it hits the spot every time I am craving some fall comfort food. Unfortunately for Adam, sometimes it warms his soul up a little bit too much, and then he gets heartburn after eating it (which is why I keep Nexium® 24HR Tablets 42ct around). It's packed with flavor and warms the soul--basically, this soup tastes like fall and I absolutely love it! 

Slow Cooker French Onion Soup

Ingredients:
  • 4 cups of unsalted beef broth
  • 4 garlic cloves
  • 2 tablespoons of thyme
  • 2 tablespoons of black pepper
  • 2 tablespoons of sea salt
  • 3 large yellow onions
  • 4 servings of either Gruyere or Swiss cheese (optional)
Directions:
  1. Mince the garlic and stir it in with the thyme, black pepper, and sea salt.
  2. Peel and chop the yellow onions into rings. 
  3. Heat a large stove top pan and cook the onion rings until they are translucent--you may cook the onions in an extra virgin olive oil if you wish.
  4. While the onions are being cooked, pour the beef broth into the slow cooker, and pour in the garlic, thyme, black pepper, and sea salt seasoning mixture. Stir the broth.
  5. Pour the cooked onion rings into the slow cooker and gently stir them into the broth.
  6. Set the slow cooker to low for 6-8 hours. I prefer 8 hours if you have the time, but 6 hours is more than enough time. 
  7. Serve the soup by itself, or you can opt to melt cheese over it!
