Bite-Sized Southwestern Bruschetta

Adam and I have a new work schedule, and one of the biggest changes we're still adjusting to is the fact that we don't have the weekends off. But it's more than just having to work on Saturday and Sunday for us since now we are missing out on one of our favorite weekend traditions: brunch!

One of our favorite traditions we've started this winter was our weekend brunch after our spin class. We would head downtown, spend an hour sweating it out on the bike, and then we'd walk across the street and grab a late breakfast. My weekends felt centered around this, and now that our new days off are Thursdays and Fridays I'm not sure we'll be able to make our brunch tradition happen again for at least a few months. With the Phoenix summer heat approaching any minute now, I'm weary my love for sitting out on the patio enjoying some delicious bruschetta and wine at my favorite spot downtown won't be an option any more.

Missing out on brunch is a bummer for sure, but we've come up with a solution (and this homemade, Southwest-inspired bruschetta is the key!) This small appetizer recipe is a spin on a classic bruschetta appetizer, featuring Southwestern flavors and ingredients including jalapeño, cilantro, and lime juice. 

Southwestern Bruschetta

  • 1 fresh baguette (thin)
  • 4-5 medium tomatoes
  • 1/2 of a large white onion
  • 2 jalapeño peppers
  • 1/2 cup of fresh cilantro
  • 1 tablespoon of lime juice

  1. Cut the large white onion in half, and store the other half. Peel and chop up the onion into small pieces. 
  2. Remove the tomatoes from their stems, cut them in half, remove the seeds, and dice the tomatoes into small pieces. 
  3. Chop the jalapeño peppers horizontally and remove the seeds. 
  4. Toss and stir all of the ingredients in a bowl and serve immediately on bite-sized slices of baguette.
