Despite having our allergies, the springtime is our favorite time to get outside and prepare our dinner on the grill. This past week, Adam and I spent some quality time at the grill and cooked all of our proteins for the next week and did some meal planning. It was productive, and we had a nice time sitting by the grill in the shade and enjoying the breeze. With all of the work we've been doing lately, it was nice to kick back and just talk while we grilled some chicken for our upcoming meals.
Southwestern grilled chicken salad has been my go-to salad lately--it's packed with flavor to keep the salad interesting (if you're anything like me, you would agree that eating salads can get boring really fast) and lots of protein to keep me feeling full. When I first tried smartwater sparkling, I thought it would be the perfect pairing with this salad. Since then, Adam and I have been adding it to our meal plan to elevate our dinners and we've been enjoying drinking sparkling water!
Today, I'm sharing my recipe for our favorite Southwestern grilled chicken salad featuring ingredients including avocado, jalepeño peppers, black beans, tomato, and red onion!

Today, I'm sharing my recipe for our favorite Southwestern grilled chicken salad featuring ingredients including avocado, jalepeño peppers, black beans, tomato, and red onion!
Southwestern Grilled Chicken Salad
Ingredients:
- 4 cups of romaine lettuce
- 1 boneless grilled chicken breast
- 3/4 cup of black beans
- 1/3 cup of chopped red onion
- 1 medium-sized tomato
- 2 jalapeño peppers
- 1 avocado, halved
Directions:
- Prepare the grilled chicken ahead of time (and re-heat chicken when you're ready to prepare your salad).
- Wash and shred about 4 cups of romaine lettuce and set into a large salad bowl.
- Chop up red onion, jalapeńo peppers, tomato, and slice half of an avocado.
- Slice up the grilled chicken into bite-sized pieces and set on top of the salad, and then place the remaining ingredients in the bowl.
- Finish your salad with your preferred salad dressing (we prefer avocado ranch), and serve alongside your preferred beverage. Enjoy!
When I went shopping for groceries at our local Safeway, I grabbed everything I needed for this Southwestern salad and some smartwater sparkling. smartwater sparkling is the perfect pairing to your springtime dinner or entertaining menu! Sparkling water elevates the dining experience, and smartwater sparkling is vapor distilled with electrolytes (so it's our preferred sparkling water choice).
