Celebrating our 6th Anniversary with Mountain Shadows

Today, I am sharing all of the travel details from our hosted, luxurious wedding anniversary staycation at the newly renovated Mountain Shadows in Paradise Valley, Arizona!


Sometimes it is hard to believe that it has been six years since we said "I do," but sure enough, 2017 is here and it's been quite some time since I married my best friend in front of all of our friends and family! 

This past weekend, Adam and I celebrated our 6th wedding anniversary in style and enjoyed a luxurious staycation! The first day, we spent a  quick overnight stay at Hotel Valley Ho (which is also where we spent our 4th wedding anniversary) and then we checked into Mountain Shadows. When our friends from Mountain Shadows agreed to host us for our anniversary, we packed our bags and took an Uber across town to enjoy a few nights away from the clutter of our apartment and our insane to-do lists.

I've always been a fan of staycations (heck, that is how Adam and I spend our vacation time more often than not), especially since there are so many gorgeous resorts at our disposal here in the valley of the sun. Mountain Shadows reopened this spring, and when we heard they wanted to have us come stay with them for our anniversary we were so excited! All of the pictures on their website had us amped and ready for a romantic, chic local getaway for weeks and when we finally checked into Mountain Shadows this weekend we were not disappointed!






All of the details from checking in at the lobby to getting our room keys and unpacking our weekend bags exceeded our expectations! The bright white, clean and modern ambiance and decor of the hotel lobby and the room was chic but also very inviting and comfortable!

Adam and I spent some time unpacking and relaxing after we checked in, and then about a half hour later we decided to throw on our swimsuits and hit the pool for a few hours! Sure enough, the pool was relaxing and beautiful just like the rest of the property at Mountain Shadows. We were surprised the pool was not more crowded, but we were happy to have some time to ourselves and took full advantage of the poolside menu and ordered some drinks! After spending some time working on our tan and enjoying the mountain views from the edge of the infinity pool, we ran to our hotel room to get changed and dry off and then headed down to the Mountain Shadows restaurant, Hearth '61, for some late afternoon coffee and a quick bite to eat before our dinner reservation later that evening.




Adam and I enjoyed a couple of cold brew iced coffees and had a quick caffeine pick me up, and then we split the h' 61 burger, some garlic parmesan french fries, and a side of bacon. This was by far our favorite lunch we had all weekend--the burger was cooked to perfection, topped with tillamock cheddar cheese, bacon onion jam, tomato, lettuce, and stacked in-between a sea salt brioche burger bun! 

After having a bite to eat, we went back to our garden guest room suite for a little happy hour treat. We enjoyed some wine, showered, relaxed, and then we got ready for dinner at Hearth '61.



We have so many good things to say about Hearth '61! The views from our table overlooking the mountain were beautiful, and we enjoyed watching the sun set while we enjoyed our dinner. It is such a well-decorated restaurant with wonderful desert details all around (including adorable little bunches of cacti and other desert dwelling succulents in glass bowls). 



We started our meal with a few drinks from their bar--Adam had a "new fashioned," which is their spin on a traditional old fashioned with chocolate bitters sprinkled onto the drink. I enjoyed their peachy mule, which is made with peach nectar vodka, lemon juice, fresh thyme, cranberry, and ginger beer. While we enjoyed our drinks, we sampled their warm duck confit (served with smoked potato, caramelized fennel, candied pecan, and crostini) as well as their refreshing and light heirloom tomato salad. 








For our entrees, Adam and I split the short rib agnolotti and the tenderloin of beef. Both of our main courses were so delicate, flavorful, and well cooked. We were both so pleased it was hard for us to share our dishes! Then after our main course, we finished our evening with a little dessert. We ordered the peanut butter mousse (which was my favorite) and the molten lava cake with black cherry ice cream. 


Everything from our dinner at Hearth '61 was so delicious! We went back to our room after dinner, relaxed for a bit, and then we caught the season premiere of the new season of Game of Thrones before the lightning storm started (which we then watched from our patio window--torrential rain and lightning is pretty exciting for us Phoenicians!) 


Waking up feeling rested, we got up and got ready for our breakfast reservation back at Hearth '61!

We had another incredible meal at Hearth '61. Their breakfast menu was not only so beautiful to photograph, but everything tasted amazing! We both ordered and shared a number of items from their menu including a crispy Belgian waffle with sweet cream and fresh berries, eggs benedict, their h '61 brioche morning bun, spicy turkey sausage, cold brew coffees, mimosas, bellinis, and more fresh berries for sharing! 

Everything was seasoned and cooked to perfection--it was yet another wonderful anniversary meal! 







After we enjoyed our breakfast at Hearth '61, we went back to our garden suite and relaxed for a little while. Then we spent the rest of our day lounging at and swimming in the pool, as we tried to enjoy the last few hours of our anniversary staycation before taking an Uber back home to our offices. 

We had a wonderful stay at Mountain Shadows, and we will certainly be back (and ready to eat! Because Hearth '61 is one of our favorite new restaurants in Paradise Valley!)

  1. Happy Anniversary! Those waffles and mimosas did me in. Perfect Sunday breakfast options! I have an irrational fear of lightning storms so I probably wouldn't of enjoyed that but maybe a few more mimosas and I wouldn't of minded haha.

  2. Congratulations on 6 years! That's wonderful, and here's to many more! Mountain Shadows looks like such a great place to retreat to. I'm a food blogger, so of course, I'd love the food. If I'm ever lucky enough to go, I'd especially love to try the waffles and mimosas. Yum. x

  16. First off, Congrats on your Anniversary! Arizona is such a beautiful place to travel, the scenery is absolutely breathtaking. Having a great hotel to celebrate is wonderful and the one you stayed at looks so luxurious. And that food!! Yum
