With so many new shows to keep up with, I have started hosting a girls night in to stream all of the episodes we need to catch up on!

All summer long, I did nothing but complain about how there weren't any good new television shows to watch and I just ended up binge-watching reruns of old seasons of some of my favorite shows to keep me over until fall. Now that fall is here, I cannot help but laugh because I feel nothing short of overwhelmed by how many amazing shows are out right now all at once, and how difficult it can be to stay caught up so I don't read or see any spoilers online!

My girlfriend suggested we get together and watch tv, but when I went over to her house, she didn't have anything for us to eat or drink and we all ended up hangry and grouchy with nothing to snack on while we watched our shows. So I decided that it was my responsibility to assume the hostess role, and I have been hosting our weekly/mostly bi-weekly girls nights in where I have the ladies come over to watch our tv shows and enjoy delicious food and drinks all night long. 

Today, I'm sharing a recipe for these amazing bacon and queso french fries the girls have been begging me to make again. I made these fries for the first time the week of Halloween when our favorite 80's inspired, science fiction thriller show came back for its second season (if you've been living under a rock, for the last month or so, you probably have no idea what I'm talking about).

These bacon and queso fries pair perfectly together with some ice-cold  Diet Coke®! I like to stock up on a dozen or so bottles before our tv night since I know we will all enjoy some while we snack on some food and watch tv together. I was able to pick up everything I needed for our tv night at home at our local Safeway, including all of the bottles of Diet Coke we keep stocked in our fridge while we have friends over and everything I needed to make these delicious bacon and queso french fries! Now, let's talk snack food! TV night is not complete without the perfect snacks, and since we love having homemade fries to snack on while we watch our shows, I wanted to share this delicious recipe for bacon and queso french fries that is absolutely perfect for your next game night or TV night in!

Bacon and Queso French Fries

Ingredients:
Directions:
  1. Cook the bacon in a non-stick stovetop pan or griddle over medium heat. Flip the bacon and ensure it's fully cooked. 
  2. Set the bacon aside on paper towels to collect any extra oil. 
  3. Wash the potatoes of any dirt and debris, and ensure they are completely dry and no water is dripping from them. 
  4. Either use a potato french fry slicer (like the one shown in my pictures you will find below) or carefully slice the potatoes by hand into vertical slices. 
  5. Fill a personal fryer with canola oil (ensure that you put the correct amount of oil in it and follow the directions for yours--my fryer calls for 16 ounces) and heat the oil. 
  6. Place a small handful of fries into the fryer, and stir using a fryer-safe spatula. 
  7. Continue to keep the potato french fries in the fryer until they are fully cooked. It should take about 5-8 minutes with most standard fryers, but this will depend on the heat of your oil (I recommend placing a few test fries in there and keeping a timer going to see how long it takes for them to cook before you try to fry the remaining potatoes in batches). 
  8. Once they are cooked, carefully remove them from the fryer and place them on a plate covered with paper towels (to help collect the excess oil while they cool). 
  9. Repeat this process until you have cooked all of the fries. 
  10. Move the fries onto a large platter, and sprinkle them with salt and pepper. 
  11. Pour warm queso over the fries, and sprinkle small pieces of bacon over them.
  12. Serve and enjoy with chilled Diet Coke!
