This week, we are planning to welcome the new year with some friends with yummy drinks and a delicious spread of homemade recipes!

As we have gotten older, we now prefer to spend most of our holiday celebrations in a more intimate setting. We'd much rather all get together at a friend's house than crowd around in a circle in a loud bar. This year, we are attending a few New Year's Eve parties and one large bar crawl the night of New Year's Eve. For our first holiday get-together this week to welcome the new year, our friends are having a potluck (and naturally, I signed up for dessert!) These yummy, honeycomb drop cookies have the holiday flavor that we have all been enjoying all season long, but taste lighter than the traditional cookies I make that are usually packed with chocolate, peanut butter, frostings, etc. 

Today, I am sharing this easy, flavorful honeycomb drop cookie recipe featuring Don Victor® Orange Blossom Comb Honey Globe Jar! These honeycomb drop cookies are sure to please the crowd, so be sure to whip up a batch or two for your end-of-the-year soirees as we watch the ball drop and welcome 2018 with open arms!




Honeycomb Drop Cookies


Ingredients: 
  • 1/2 cup of honey from the Don Victor® Orange Blossom Comb Honey Globe Jar
  • 1 honeycomb, chopped (also comes in the Don Victor® Orange Blossom Comb Honey Globe Jar)
  • 1 egg
  • 2 teaspoons of vanilla extract
  • 1/2 cup of vegetable oil
  • 1/2 stick (1/4 cup) of unsalted butter, softened
  • 3/4 cup of baker's sugar (granulated sugar is fine)
  • 2 1/2 cups of all-purpose unbleached flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1 tablespoon of ground cinnamon
Directions: 
  1. Preheat the oven to 350 degrees (F). 
  2. Line a baking sheet with parchment paper.
  3. Use a blender or food processor to finely chop up and smooth the honeycomb. 
  4. In a large mixing bowl, cream the unsalted butter and sugars. Mix them for at least 5 minutes until it is silky and smooth in texture, and then mix in the egg. Mix in the oil, vanilla, honeycomb, and honey. Continue to cream the mixture. 
  5. Sift in your flour, salt, baking soda, and baking powder. Be careful not to overmix the dry ingredients into the wet ingredients, as this will affect the texture and create tough cookies. Mix the dough until it starts to come together and then stop once the dry ingredients have disappeared. 
  6. Use a spoon or small ice cream scoop to scoop up a small ball of cookie dough (about 1-1.5 inches wide) and drop it onto the baking sheet so they are about 2 inches apart. 
  7. Bake the cookies in the oven at 350 degrees (F) for 11-13 minutes, or until the edges of the cookies have begun to brown. 
  8. Leave the cookies untouched for at least 5 minutes on the baking sheet. 
  9. Before the cookies completely cool, sprinkle all of them with a pinch of ground cinnamon.
  10. Once the cookies have cooled a bit, you can move them to a cooling rack or serve warm. Enjoy!
