Grilled Chicken and Veggie Rice Bowl

February is American Heart Month. See this simple and delicious health-conscious recipe inspired by my recent partnership with USA Rice--this recipe idea is easy to make and perfect for a weeknight dinner!


Not every recipe has to be adventurous, time-consuming, or feature new flavors. Sometimes, all you really need for dinner is a bowl of something familiar! Today, this simple (and very tasty) recipe is inspired by my partnership with USA Rice

This rice bowl is packed with steamed broccoli, shredded carrots, and teriyaki grilled chicken tenders. It's a simple recipe that anyone can make with your average kitchen essentials--a stovetop pan, a microwave, a potato/veggie peeler, some non-stick cooking spray, teriyaki marinade sauce, and a handful of the most common produce, pantry, and protein ingredients most people already have in their home.

With this month being American Heart Month, I am sharing this recipe made with U.S.-Grown brown jasmine rice and wholesome ingredients with our nutrition in mind. Oftentimes, we can get caught up in sharing how much we are enjoying our favorite comfort foods and snacks on game day, but I often do not share our more health-conscious recipes on the blog because they may not seem as exciting or "Pinterest-worthy."

Trying to change my mindset on this, I am sharing this grilled chicken and veggie rice bowl recipe in hopes that my images and the simplicity of this recipe inspire you to create beautiful food that is also packed with plenty of nutrition and soothes your body and soul with how delicate yet flavorful it is! 











Grilled Chicken and Veggie Rice Bowl

Ingredients:
  • 8 ounces of chicken breast tenders
  • 1/4 cup of low-sodium teriyaki sauce
  • 2 tablespoons of sesame seeds
  • 1 cup of U.S.-Grown Brown Jasmine rice
  • 3 cups of broccoli florets
  • 1/4 cup of carrots, shredded

Directions:
  1. Spray a stovetop pan with non-stick cooking spray. Heat to medium-low heat.
  2. Line the pan with your chicken breast tenders, and once the chicken has begun to cook on one side, pour the teriyaki sauce and the sesame seeds over the chicken while it continues to cook. 
  3. Fill a medium-sized pot with 2 cups of water and bring it to a boil.  Once the water is boiled, pour the 1 cup of U.S.-Grown Brown Jasmine rice into the pot. Allow it to boil for one minute, and then cover the rice and turn the heat down to low while it continues to cook and soften.
  4. While the rice is cooking, rotate the chicken until it is grilled all of the way through and it has browned. 
  5. Wash the broccoli with water, and then place the florets into a microwave-safe bowl with 2 tablespoons of water. Cover the bowl with a microwave-safe plate, and place the broccoli into the microwave. Heat on high for 2 minutes to allow the broccoli to steam. Carefully remove the hot bowl and plate from the microwave, and drain any excess water. 
  6. Once the rice is cooked, fill a dinner bowl with the rice. Then, add the chicken, broccoli, and sprinkle with shredded carrots. Enjoy! 

For this rice bowl recipe idea, we used U.S.-Grown Brown Jasmine rice. U.S.-Grown rice, which is rich in vitamins and minerals, is one of the most heart-healthy foods we like to enjoy alongside our favorite proteins and vegetables.
