Strawberry and Goat Cheese Crostini

Spring is almost here and that means it's almost time for siestas on the patio and entertaining friends!

After a long work week, Adam and I love to unwind on our patio and enjoy a moment away from technology and have a chance to chat and savor a tasty snack! Some of our favorite snacks to eat after work in the afternoon before a late dinner include fruits and nuts, charcuterie, and crostini. Last week, we had this amazing strawberry and goat cheese crostini that I shared on Instagram stories and asked everyone if they wanted to see us share it on the blog. The results from the poll that I ran showed me just how excited everyone was about this crostini, so I just knew I had to share it on the blog along with how much we love to enjoy snacks this like crostini with one of our favorite drinks!

Between this simple-to-prepare but complex-in-flavor appetizer recipe and stocking up on Diet Coke®, you will have everything you need to have some friends over or entertain your family on the weekends!

Diet Coke® recently got a facelift while keeping the same great taste it's always had and has come out with some new flavors that you can experiment with to get some really flavorful pairings with all of your favorite recipes. You can try any one of the new flavors they came out with including Diet Coke® Feisty Cherry, Diet Coke® Ginger Lime, Diet Coke® Twisted Mango, and Diet Coke® Zesty Blood Orange! We are hoping to start recipe testing the Diet Coke® Ginger Lime with a new chicken wing recipe once it gets a little bit warmer to fire up the grill! For this specific crostini recipe, however, I would recommend sticking with Classic Diet Coke®.

Strawberry and Goat Cheese Crostini


  • 10 medium strawberries
  • 1/2 loaf of French bread (8-10 slices cut about 1 1/2 inches thick)
  • 1 1/2 tablespoon of light olive oil
  • 4 basil leaves
  • 4 oz of goat cheese
  • 1 1/2 tablespoon of balsamic vinegar
  • 1/2 tablespoon of ground black pepper


  1. Wash, dry, and remove the stems from the strawberries. 
  2. Chop the strawberries up into small pieces (I prefer to cut them in half, cut them in half again, and then cut them in half once more so I can get small pieces that sit nicely on the bread). 
  3. Dice the basil leaves into small, thin pieces (removing the stem and tossing away or reusing in a different recipe). Mix the basil in with the strawberries in a bowl. Keep it in the refrigerator while you prepare your bread, or until you are ready to serve the crostini.
  4. Prepare the French bread slices and lightly brush them with olive oil. Toast them in a toaster oven until they are lightly browned and crisp to the touch. 
  5. Spread goat cheese on the bread while it is still warm, as this will allow you to better smooth the cheese over the entire slice and get a more even layer of goat cheese. 
  6. Scoop about 1-2 tablespoons of strawberry basil mixture on top of the bread slices (you can add more or less depending on how much bread you have or how full you want your crostini to be). 
  7. Drizzle the prepared crostinis with balsamic vinegar, and then add a little bit of fresh ground black pepper. 
  8. Serve and enjoy with a Diet Coke®!
