Keto-Friendly Low Carb Cheesecake with Almond Flour Crust

This low carb cheesecake is the perfect keto diet dessert for entertaining! This may not be the sexiest-looking cheesecake I have ever seen, but after a month of adjusting to a keto diet, this low carb cheesecake dessert was happily welcomed with open arms in our home!

For 5 weeks, Adam and I have been on a strict low carb, high fat, moderate protein diet. The biggest challenge for us has been finding foods that we can enjoy that are lower in carbs--when we began researching ketosis and the keto diet lifestyle change, we were shocked to see how much of an impact carbs and sugar have on ketosis (and why it is essential for us to keep a close eye on our carb and sugar intake now). 

We've begun switching out some of our normal pantry staples to keto-friendly choices. We switched out the cake flour for almond flour, went from milk to heavy whipping cream, and switched from sugar to erythritol. This has had the biggest impact on baking, and I have been experimenting trying to find a way to combine these different ingredients I am not used to having in my pantry into something Delicious that I can enjoy without having the guilt and knowing that having it in moderation will keep my body in ketosis, so I can continue to burn fat for fuel!

This keto-friendly cheesecake may not be as glamorous as traditional New York Cheesecake, but when I close my eyes and take a bite, I can savor and enjoy the indulgence without the guilt that comes with 'cheating' on my new lifestyle change. This low-carb cheesecake is a must-try for anyone who is on the keto diet or someone who is looking to cut carbs while still enjoying dessert!









Keto Cheesecake (Low Carb, High Fat)
*Yields a cheesecake that fits into a 10" spring form pan. 

Crust Ingredients:
  • 2 cups blanched almond flour
  • 1 teaspoon vanilla extract
  • 5 1/2 tablespoons of grass-fed butter (softened, room temperature)
  • 3 tablespoons of granular Swerve Sweetener

Cheesecake Ingredients:

  • 32 ounces of regular cream cheese (softened, room temperature)
  • 3 large eggs
  • 1 lemon
  • 1/2 teaspoon of vanilla extract
  • 1 1/4 cup of confectioners Swerve Sweetener

Directions:
  1. Preheat the oven to 350 degrees (F). 
  2. Line the bottom of a 10" spring form pan with parchment paper. 
  3. In a medium mixing bowl, combine the almond flour, vanilla extract, butter, and granular sweetener until it's all mixed in. Should look a lot like sand and stick a little bit together.
  4. Pour the mixture into the pan on top of the parchment paper. Use the back of a spatula or spoon to flatten it and spread it out across the entire bottom of the pan. Pack it down gently so that it's evenly distributed and flat. 
  5. Place the spring form pan on top of a baking sheet, and bake the crust in the oven on the middle rack for 10-12 minutes, or until the edges have just begun to brown, at 350 degrees (F). Once it is lightly browned on the edges, remove it from the oven and allow it to cool completely!
  6. In a large mixing bowl, whip the cream cheese and confectioners sweetener together until it is fluffy, creamy, and the confectioners cannot be seen. 
  7. Mix in the eggs one by one, and then mix in the vanilla extract. 
  8. Slice the lemon in half, and then squeeze the juice of the lemon into a small bowl. Scoop 1 tablespoon of fresh lemon juice into the cheesecake batter and mix it in. 
  9. Pour the cheesecake batter mixture onto the crust (make sure the crust is cool to the touch before you do this) and spread it and smooth it out using a baking spatula or the back of a spoon.
  10. Place the cheesecake back on top of a baking sheet, and bake it in the oven on the middle rack for 45-50 minutes or until the middle is slightly jiggly but almost completely set (the edges should be slightly browned, and you may notice that it has shrunk in the pan). 
  11. Allow the cheesecake to cool completely in the pan until it is completely cool to the touch before moving it to the refrigerator (do not put it in the freezer, as this will cause the texture to change and the cake will definitely crack).
  12. Do not attempt to remove the spring form pan. Once the cheesecake pan is cool to the touch, move it to the refrigerator to allow it to set and work its magic for a minimum of 8 hours (sorry, y'all! You can't force this magic!) Ideally, it tastes best if it's given a full 12 hours to set but it's meant to be left overnight. Remove the spring form pan--you can use a knife to gently separate the edge of the crust from the pan. Serve chilled and enjoy!

**I have not provided nutritional facts due to the fact that it depends entirely on which brands you use. For instance, the Bob's Red Mill almond flour that I use may differ in nutritional facts from the one you have at home. Same goes for ingredients such as butter, eggs, etc.

My suggestion is to add up the total amount of calories, fat, and net carbs for your entire cheesecake based on the ingredients you have in your home. Then, divide those numbers by how many slices you want to cut the cheesecake into (e.g. 8, 10, 12, etc). This will give you the most accurate nutritional facts!

  5. My sister is actually on this diet because she has hashimotos thyroiditis and her thyroid is completely shot. So her weight goes up and down and all around. Her doctor suggested this and it has worked wonders. HOWEVER! She has had such a hard time finding sweet treats and it's been boring.
