Mozzarella, Prosciutto, and Tomato Basil Cucumber Bites

Summer is almost here, and we are excited to begin hosting our very own summer cookouts!

Even though it may have taken us half of an entire year, we are finally moved in and completely prepared to have our friends over and host them for summer parties and afternoon cookouts by the pool! Several months were spent sourcing discounted furniture, decorations, and home goods that are best suited for entertaining up to a dozen of our friends and co-workers. Thanks to our obsession with visiting the local thrift stores, we finally have everything we need to complete our summer entertaining wish list so we can invite our friends over to enjoy some drinks, swim at the pool, and sit down in front of the firepit and enjoy some yummy bites!

Summer entertaining is a breeze with delicious, easy-to-make appetizers like these cucumber bites made with prosciutto, tomato, and Galbani® mozzarella cheese! Today, I am sharing how easy these are to make and how perfect they are for all of your party and entertaining plans with all of the summer holidays, graduations, and pool parties coming up!

We have so much to look forward to the month of June, including a handful of trips we have planned and our plans to celebrate June Dairy Month! After our recent press trip out to Wisconsin, we are loving all of the different kinds of inspiration we have discovered when it comes to incorporating and elevating cheeses into all kinds of recipe ideas. 

Last week, I decided to have a few of our girlfriends over to catch up on watching some of our favorite shows. Before I had the girls over, Adam and I stopped by our local farmers market and grabbed some fresh produce. On the way home, we went to our local grocery store and picked up some drinks to enjoy during our watch party along with ingredients to make pasta for all of the girls, and we also picked up a pack of Galbani® mozzarella cheese (so we could make these delicious, bite-sized appetizer snacks!)


Mozzarella, Prosciutto, and Tomato Basil Cucumber Bites

Ingredients:
  • 2 large cucumbers
  • 8 oz of Galbani® mozzarella cheese
  • 2 large heirloom tomatoes
  • 1/4 pound of prosciutto
  • 1 bunch of fresh basil
  • 1 tablespoon of light extra virgin olive oil
  • 2 teaspoons of crushed black pepper
Directions:
  1. Wash and dry the vegetables.
  2. Chop the cucumber and tomato horizontally into thin slices. Then, remove the Galbani® mozzarella cheese from the package and chop it horizontally into thin slices.
  3. Tear the prosciutto into small, bite-sized pieces.
  4. Stack a piece of cucumber with mozzarella cheese, tomato, and prosciutto. 
  5. Dice the fresh basil into tiny pieces, and then place a piece of basil on top of every cucumber bite. Drizzle a small amount of extra virgin olive oil on top, and follow up with just a hint of crushed black pepper. 
  6. Serve immediately and enjoy! You can also prepare these up to 90 minutes before an event, and store them in a refrigerator and serve them chilled so they still taste fresh.

We can't keep Galbani® mozzarella cheese in our refrigerator long enough before we run out! It's such a diverse ingredient that works wonderfully with so many of our favorite recipes. Our favorite way to use Galbani® mozzarella cheese is with appetizers and with Adam's favorite Italian American-inspired recipes. It is no wonder that Galbani® is the #1 cheese in Italy since it is made in the traditional Italian way.
