Fruit Pizzas with Peanut Butter and Waffles

We've been so busy with our puppy, Bowie, that we struggle during the week to enjoy breakfast as a family. For this recipe idea today, I prepared breakfast "pizzas," made waffles smothered in creamy peanut butter and topped with fruit!


The last few weeks have been ruff! Yes, you read that correctly. 

Welcoming our beloved fur baby into our home has brought us bundles of joy, and with that joy comes sleepless nights, pee accidents, destroying our stuff, early teething and biting, and also head-pounding barking. Even trying to sit down for a meal with a new puppy is not as enjoyable as you would think. Needless to say, raising a puppy has been a lot of work, and honestly, it can be really difficult to enjoy the process. Like our fur baby, we are also learning what to do and what not to do so it can be a tiresome day for everyone involved. 

But those moments in-between the puppy drama, Bowie will calmly walk over to me, hop on my lap, and rest his head on my leg or nuzzle himself up on my shoulder to take a little nap. He is as much of an angsty teenager puppy as he is a cuddle bug. Adam and I have been doing our best to stay informed of ways to teach our puppy to behave better, and we give it our best effort to maintain this training to try to raise him to be a well-behaved dog. 

Right now with Bowie, there is a lot of begging, jumping up, and whining involved. Which makes it not as fun for me and Adam to sit down and enjoy a meal with Bowie around. One way that we have found that works to enjoy a meal with an anxious puppy waiting around for you to give in to those big puppy dog eyes and give him a bite, is to try to eat while he is sleeping or while he himself is eating. For this recipe idea today, I prepared breakfast fruit "pizzas," made with waffles smothered in creamy peanut butter and topped with fruit for me and Adam to enjoy for breakfast while Bowie chowed down on his own breakfast bowl. 

We do not have an excess amount of time to make meals throughout the week, so popping a waffle into the toaster oven for a few minutes and then spreading it with peanut butter and some fruit toppings is a fast, convenient, and delicious breakfast! 


Fruit Pizzas with Peanut Butter and Waffles

Ingredients:
  • 3-4 waffles
  • 1 cup of creamy peanut butter
  • 6 large strawberries
  • 1/4 cup of blueberries
  • 1 banana
Directions:
  1. Wash and dry the blueberries and strawberries. 
  2. Destem the strawberries, and chop them into bite-sized pieces. 
  3. Remove the banana peel and chop it up into bite-sized pieces. 
  4. Warm and toast the waffles in a toaster oven.
  5. Smother the waffles with peanut butter, and layer them with fruit in a pizza-like decoration with alternating fruits.
  6. Serve and enjoy!

  4. My family likes to have these for breakfast. We just call them waffles with fruit. Everyone gets to pick their fruit topping while I make homemade waffles.

  16. This takes me back to my childhood when we'd eat peanut butter and banana sandwiches. This version looks a bit healthier with fruit insyead of pancake syrup. Yum!
