Our desert summer heat isn't going anywhere, which means we are willing to try all kinds of refreshing happy hour drinks all summer long. Rather than have heavier drinks like red wine or stout or dark ales, we lean more toward lighter and more fragrant cocktails for happy hour this time of year. Today, we are sharing the recipe for a super fragrant, sweet and light cocktail you can enjoy throughout the summer and warmer months.
This summer cocktail is made with one of my favorite Italian wines--Processo. Prosecco sparkling wine is most commonly used in bellinis, but I love to drink it alone as well as combining it with some other juices to make summer cocktails. With the way that Prosecco is made, it naturally has a more fruity flavor with undertones of pear, green apple, and honeydew melon (which makes it ideal for a refreshing summer taste and great to pair with lemonade). Combining Prosecco with Santa Cruz Organic Lemonade, Santa Cruz Organic 100% Lemon Juice, and a hint of fresh mint and blackberries makes for an incredible summer cocktail!
Santa Cruz Organic Lemonade is perfect for this summer cocktail, and it tastes just as delicious even on its own. There are a variety of other Santa Cruz Organic lemonades available as well as Santa Cruz Organic 100% Lemon Juice which is ideal to keep around when you're making homemade marinades, sauces, and dressings that often call for lemon juice. Santa Cruz products use only certified organic and non-GMO ingredients and processes, so if you're passionate about that and you are making a note of what kinds of items are making it home with you from the grocery store to your pantry that's something to look out for.
Lemonade Prosecco with Mint and Blackberries
(recipes makes 1 large pitcher)

Ingredients:
- 1 container of Santa Cruz Organic Lemonade
- 1/3 cup of Santa Cruz Organic 100% Lemon Juice
- 1 bottle of Prosecco sparkling wine
- 1/4 cup of lemon-flavored vodka
- 4 sprigs of fresh mint
- 2 cups of blackberries
Directions:
- Use an empty large pitcher to combine the Santa Cruz Organic Lemonade, Santa Cruz Organic 100% Lemon Juice, Prosecco, lemon-flavored vodka, fresh mint, and blackberries.
- If you want just a hint of mint and blackberries in your drink, let it sit for about 30 minutes.
- If you are looking for a deeper flavor of mint and blackberries, you can also place the pitcher in the refrigerator and allow it to rest overnight. The next day, you will have a more flavorful and aromatic pitcher (this is a similar process compared to preparing homemade sangria). This cocktail pitcher should remain fresh up to 48 hours after it was initially made, so you have some time to prepare it at the end of the workweek if you have a weekend happy hour you are preparing it for this summer.
- Serve it chilled in a cocktail glass and add some mint and blackberries as a garnish (optional). Enjoy!

ReplyDeleteYum, this sounds delicious. I'm not a huge blackberry fan but strawberries or cherries would be a perfect substitution. Strawberry lemonade is my favorite too.
