Adam has been going strong for some time now with a ketogenic diet, but it's always difficult for him when he wants to be able to enjoy some comfort food and watch a game. Over the weekend during the big game, while our team wasn't playing, we did decide we wanted to watch the big game. This is Adam's second time around on a ketogenic diet, and while it's not meant to be a long-term diet, he is wanting to maintain a low-cal high fat diet until he reaches his goal weight.
Food is love, and it's especially hard during game day to not make him snacks that he usually goes after. I figured it would be a nice way to enjoy something familiar that we'd normally have on game day but with a ketogenic twist on it: almond flour mozzarella sticks.
While it's not the most complicated recipe in the world, it is most certainly a necessary comfort food for anyone who recently started adapting to a ketogenic diet as a part of their new year's resolutions. Today, I am sharing how we make fried mozzarella sticks that are mindful and can be enjoyed while you are eating keto.
Almond Flour Mozzarella Sticks
Ingredients:
- 5 mozzarella sticks (will be sliced in half to make 10 sticks)
- 4 eggs
- 3/4 cup of almond flour
- 1/4 cup of grated parmesan and romano cheese
- 2 tablespoons of garlic powder
- 1 teaspoon of fine sea salt
- 2 twigs of oregano (1 for the batter, and 1 as an optional garnish)
- 1/4 cup of avocado oil (for frying)
- Slice your mozzarella sticks horizontally into 2 halves.
- Cut your oregano and save half of it for garnish.
- In a medium-sized bowl, combine and mix the almond flour with the grated cheese, garlic powder, sea salt, and oregano.
- In a smaller bowl, crack the eggs and whisk.
- Dip the mozzarella sticks into the egg, and then into the flour mixture. Then, go back and dip the same mozzarella stick again into the egg, and then again into the flour mixture. Set it aside and repeat for all of the mozzarella sticks.
- Place the battered mozzarella sticks in the freezer for about 20-30 minutes.
- After 20 minutes have passed, heat a stovetop frying pan on medium-high heat with the avocado oil. Once the oil is hot, carefully place the sticks into the frying pan and fry on each side for about 30 seconds at a time and rotating constantly. Fry them until they are a nice tan color.
- Carefully move them to a plate to cool a bit, garnish with the remainder of your oregano, and then serve to enjoy! If you have a keto-friendly marinara sauce, you can dip the mozzarella sticks into this.
