Ingredients:
-
- 1/4 lb shrimp
- 1 cup hot salsa
- 1 cup pico de gallo
- A handful of baby spinach
- 10 tostadas
Directions:
- 1. Using a stovetop frying pan, coat the pan with hot salsa and mix the shrimp in.
- 2. Simmer and cover shrimp on medium heat for 10 minutes.
- 3. Once cooked, set oven to broil on high heat and broil shrimp in the pan for 90 seconds.
- 4. Take shrimp out of oven, flip them, and broil them on the other side for another 90 seconds.
- 5. Serve hot over tostadas and a few baby spinach, and scoop chilled pico de gallo on top of it.
Hi Adam and Cathy! I'm hopping over from Let's Get Real today. Your shrimp tostada looked so good, I just had to check it out. Sounds like a wonderful way to use my leftover shrimp from Christmas Eve. Easy and delicious. Just the way I like it.
