Extremely Peanuty, Ice Cream Sandwich
  • Ingredients

    • 1 and 1/2 sticks of butter
    • 1 cup of white sugar
    • 1 egg
    • 1/2 teaspoon of vanilla extract
    • 1 cup of flour
    • 1/4 cup of unsweetened cocoa powder
    • 1/2 teaspoon of baking soda
    • A pinch of salt
    • 1 cup of peanut butter chips
    • Your favorite Peanut Butter Ice cream
  • Instructions

    1. 1. Preheat oven to 350 degrees.
    2. 2. In one bowl, mix butter and sugar. Blend in egg and vanilla extract.
    3. 3. In another bowl, mix together the flour, cocoa powder, baking soda, and salt.
    4. 4. Combine two bowls and mix well. When ready, pour in the peanut butter chips.
    5. 5. Rub clean hands with cocoa powder and use hands to blend chips into the batter.
    6. 6. Continue using the cocoa powdered hands to roll small balls onto cookie sheet.
    7. 7. Bake for about 10-15 minutes.
    8. 8. Let stand for 1-2 minutes and move to cookie rack.
    9. 9. Once cookies are cool, set aside two at a time to put together ice cream sandwiches.
    10. 10. FYI: The larger you roll the balls, the larger the cookie will spread and ultimately be. If you want to use this recipe for ice cream sandwiches, opt for larger balls. For bite size cookies to snack on, opt for smaller balls.
