I know what you're probably thinking--carnitas, strawberries, AND chocolate? But trust me. It's not as much of an overpowering flavor pairing as you'd think. Chocolate olive oil can be used in many ways besides desserts--think of this recipe as one step closer to adventure from your standard balsamic; it's sweet and savory, but it's got a little kick to it to make it memorable.
Carnitas are a incredibly diverse ingredient if you can think outside of the box. Me personally, I love having them with something a little sweet (i.e. strawberries with just a hint of chocolate flavoring). The Del Real Food Carnitas were perfect to work with, since I could just throw them in the microwave.

Carnitas & Strawberries Salad with a Chocolate Olive Oil Drizzle
Ingredients:
- 1 1/2 cup of Del Real Foods Carnitas
- 1 flour tortilla
- 4-5 strawberries, chopped
- 2 cups of shredded lettuce
- 2 tablespoons of chocolate olive oil
Directions:
- Pre-heat the oven to 350 degrees (F).
- Place a bowl face down onto a baking sheet. Center the tortilla on top of the bowl.
- Bake the tortilla in the oven for about 6-10 minutes--keep a close watch on it and remove it from the oven once it's started to form around the bowl to form its final shape (and the tortilla has started browning).
- Let it cool for 2-3 minutes before separating the tortilla from the bowl. Set aside.
- Shred your lettuce if it hasn't already been shredded, and chop up your strawberries.
- Place your Del Real Foods Carnitas into the microwave and heat.
- Begin filling your bowl with lettuce, carnitas, and strawberries.
- Pour chocolate olive oil into the salad and mix together. Enjoy!

DeleteYou're right...I can't imagine this flavor combination! But I'm always willing to step outside of my comfort zone and try something new. I've never heard of chocolate olive oil! I'll have to look for it and see if I can find it.
