Today, I want to celebrate the upcoming movie premiere of Disney Pixar's Inside Out with an ice cream flavor inspired by the movie! If I had to choose just one emotion from Inside Out that I resonate the most with, it would definitely be Amy Poehler's character, Joy!
Her vibrance and positivity inspires her fellow mental pals to be better and keeps everything in balance. I'd like to think that I am inspiring those around me and helping everyone feel centered every day--so that's why I love Joy, and why she inspired me to whip up this most colorful and bright ice cream I've ever made!

Ingredients:
- 1 1/2 cups whole milk
- 1 1/8 cups baker's, ultrafine pure cane sugar
- 3 cups heavy whipping cream
- 1 1/2 tablespoons pure vanilla extract
- 1/4 cup of lemon juice
- 1 cup of rainbow nonpareils
- 1 teaspoon of lemon yellow icing dye
Directions:
- In a large mixing bowl, combine your milk and sugar. I use a standing mixer and have it on medium for 1-2 minutes. If you are doing your mixing by hand, you may want to stir twice as long.
- Continue stirring and then add in your whipping cream. Keep mixing for another minute.
- Add in your lemon juice, and then add in your vanilla extract. Continue to mix until ingredients are well-blended.
- Using an ice cream maker, chill and churn your creamy mixture in your pre-chilled bowl for however long your specific maker tells you to. In my mixer, it took 45 minutes until it was ready to serve. Towards the last 1-2 minutes of the churning cycle, pour in your rainbow nonpareils.
- When the ice cream is the texture you want, remove it from the ice cream maker and store in a freezer-ready container. Store until you're ready to serve it!

Isn't this ice cream so fun and bright?! I just adore it--I can't help but smile when I eat it. The bright and vivid colors remind me of the whole Inside Out cast.

ReplyDeleteI love Disgust because I'm such a big fan of Mindy K, plus Disgust has a great sense of fashion. It seems like from the previews she's a bit of a trouble maker, so that kind of appeals to me. Lol!
