Dark Chocolate, Raspberry, and Honey Roasted Almond Granola Bars

This week has been brutal. Adam and I have been feeling plagued by the flu and we're totally lacking energy, and we both are in desperate need of a mental break. It's weeks like this one when I have to remind myself to stay positive because I do have a lot to be grateful for! Eating poor choices for snacks is not the best way to deal with stress--so as much as I'd like to just enjoy a big 'ole handful of potato chips and take a nap until it's Friday afternoon, I simply cannot justify doing that. 

As I mentioned last month, I have a new year resolution to "snack smarter;" I have really been enjoying the DOVE® Chocolate Fruit & Nuts because I don't feel as guilty when I snack on them. When I'm feeling lethargic and bummed out (and hungry!) I grab one of these Dark Chocolate Raspberry and Honey Roasted Almond Granola Bars. These granola bars are so delicious--they are packed with some of my favorite fruits, nuts, and granola ingredients. 

Dark Chocolate, Raspberry, and Honey Roasted Almond Granola Bars

  1. Preheat the oven to 325 degrees (F). 
  2. In a large mixing bowl, combine honey granola and pecans. Mix until the ingredients are distributed.
  3. Lay the granola pecan mix out into a baking dish. Bake in the oven for 10 minutes.
  4. In a medium-sized saucepan, melt butter on medium-high heat. Pour in the brown sugar, vanilla extract, and agave nectar. Whisk the ingredients together. Bring the sauce to a boil, and then set it aside on low heat (whisk until you're ready to pour it onto the granola mixture).
  5. Remove the hot granola mix from the oven and pour it back into the large mixing bowl. Pour the sauce all over the granola, and add in the crushed dark chocolate and DOVE® Dark Chocolate Raspberry & Honey Roasted Almond. Mix well. 
  6. Pour the granola batter into the baking dish and pat it down with your hand. 
  7. Bake in the oven for 30 minutes. 
  8. Set aside and allow the granola to cool for 2-3 hours.
  9. Chop up your granola and then enjoy!

Snacking smarter has made me feel better even on my grumpiest of days--because when everything else is falling apart around me, at least I know I get to choose what I eat and don't eat. These Dark Chocolate, Raspberry, and Honey Roasted Almond Granola Bars are a great alternative to the typical junk food I usually tend to crave when I'm not feeling well. When I'm at Walmart and searching for granola bar ingredients, I look for granola that has high fiber content (and is low on sugar).

Perhaps my favorite thing about this granola bar is how it has dark chocolate in it--dark chocolate is awesome! I prefer to get raw dark chocolate that is packed with iron and fiber, and I don't usually feel guilty when I incorporate it into my snacks because I know that it is packed with antioxidants and it's a smarter indulgence.

Make these tasty granola bars over the weekend and then you can pack them away to snack on throughout the week! I've found that I make better choices when I have my meals and snacks planned out for me in advance!

Sticking to my new year resolutions has its good days and bad days--some days I do a really great job focusing on what I need to do to meet my objectives, and then other days I just call it a loss and move on.
