Earlier last week, Adam and I were absolutely swamped with work and both of us struggled to find time to cook. A year ago, we would have probably ordered in take-out and had some food delivered, but this year, we've made an effort to cut down on our food delivery and we're aiming to do more cooking at home throughout the week (even when our best intentions to keep up with exemplary time management fails us). If I can find a casserole recipe that works well for me and does not take me a lot of time to prepare and bake, that means I can have more of my night back and I may actually have some time to spend with Adam after his rigorous work day!

When I look for a weeknight dinner to prepare, I try to aim for a dish that takes just around 30 minutes. While I was out grocery shopping at Walmart, I picked up a pack of Pillsbury™ refrigerated crescent dinner rolls to save for a casserole dish I wanted to prepare for dinner one night, and while I was shopping I saw that prosciutto was on sale and grabbed a pack before I headed home.

This recipe for Prosciutto Tomato Crescent Roll Casserole is a great mid-week meal that can be easily and quickly prepared at home--we are actually thinking of preparing this dish for Easter as well, so we think it would be a great holiday potluck dish to bring to a weekend brunch or Spring holiday get-together!

Prosciutto Tomato Crescent Roll Casserole
Yields 8 servings

  • 1 can of Pillsbury™ refrigerated crescent dinner rolls
  • 6 oz of prosciutto
  • 2 medium tomatoes
  • 8 slices of provolone cheese
  1. Pre-heat the oven to 350 degrees (F).
  2. Spray a casserole dish with a non-stick cooking spray.
  3. Wash and cut the tomatoes into slices.
  4. Line the bottom of the casserole dish with the tomato slices.
  5. Spread out and layer 4 slices of cheese in the center of the dish on top of the tomato slices.
  6. Grab half of the prosciutto and place it on top of the cheese towards the center of the dish.
  7. Layer another 4 slices of cheese in the center of the dish on top of the prosciutto.
  8. Unroll 1 can of Pillsbury™ refrigerated crescent dinner rolls. Place the sheet of dough over the casserole to cover, and tuck the sides of the dough to fit into the dish.
  9. Place the casserole dish in the oven on the bottom rack, and cook it in the oven for 30 to 35 minutes at 350 degrees (F) until the top is golden brown.
  10. Allow the casserole to cool for about 5 minutes before serving. Enjoy!
