Easy, Cheesy Baked Garlic Bread

In-between all of our holiday preparations and our crazy work schedules, Adam and I always try to find time for the two of us to kick back and enjoy a low-key night in. 

The holiday season always promises chaotic schedules and mile-long to-do lists, but it's important to take time to relax and enjoy time with family. We were fortunate enough that a couple of our family members from Boston came to visit with us, and we had spent some time relaxing and catching up with them last weekend. Following that visit, our insane workload was waiting for us and we immediately felt overwhelmed and unprepared for the holidays ahead. 

Even with all of the preparations we need to make and all of the extra overtime Adam has to work, we always try to manage an at-home date night so that we can spend time together. A few days ago, while Adam was working, I ran down to Safeway to pick up everything I needed for us to have an easy, convenient night in and enjoy some homemade cheesy garlic bread, a Red Baron Pizza, some ice cold Coca-Cola™ bottles and a glass of Gold Peak® Tea while we watched a holiday movie.

Today, I am sharing this easy cheesy baked garlic bread recipe made with common ingredients you may already have at home (and hopefully inspire you to take time to relax with family at home even during this insanely busy holiday season!) 

Easy, Cheesy Baked Garlic Bread

  • 1 large Italian loaf of bread
  • 2 teaspoons of garlic powder
  • 2 cups of shredded mozzarella cheese
  • 1/4 cup of garlic butter (to make your own--combine and cream 1/2 stick of butter with 2 garlic cloves and 1/2 teaspoon of parsley leaves)
  • 1/4 teaspoon of salt (optional)
  • 1 cup of marinara sauce (optional)
  1. Preheat the oven to 400 degrees (F).
  2. Line a large baking sheet with aluminum foil.
  3. Slice an Italian bread loaf in half, to create two large sections of bread. 
  4. Spread your garlic butter on both of the bread loaves.
  5. Sprinkle 1 teaspoon of garlic powder on each half. Distribute the powder evenly. 
  6. Sprinkle 1/2 cup of mozzarella cheese on both halves. Sprinkle pepper on top (optional).
  7. Gently cover the baking sheet and loaves with aluminum foil (to prevent burning the bread). 
  8. Bake the loaves in the oven at 400 degrees (F) on the middle rack for 6-7 minutes.
  9. Remove the bread from the oven, gently remove the aluminum foil, and sprinkle the remaining 1 cup of mozzarella cheese on top. 
  10. Place the bread back in the oven, uncovered, and bake for another 5-6 minutes or until the cheese is melted and has lightly browned. Remove it from the oven and enjoy with some Coca-Cola and dip it in some delicate marinara sauce (optional)

Most of the time, we do not have much time to ourselves throughout the day and are left with managing an at-home date on the couch in front of our television screen. But on the days when Adam and I can manage to get a few hours off, we like to go to the theater to catch a movie.
