Cheesy Bacon Egg Boat

Nothing says weekend brunch like a cheesy bacon egg boat! Thanks to Eggland's Best for partnering with me on this breakfast recipe post, and for allowing me to help spread the word out about their $10,000 recipe contest!


Brunch this past weekend was serious #goals!

Adam and I were feeling like going out for brunch, but we have been trying our best to budget better and we decided to not go out and spend the money when it's not entirely necessary. Rather than skimp out on our tradition of weekend brunch, we decided to bring the brunch to us and came up with an easy, cheesy, and decadent breakfast recipe that had us feeling some kinda way! 

This cheesy, bacon egg boat recipe is so easy to make and it is made with ingredients you most likely already have in your refrigerator and cabinet! We recently heard about the Eggland's Best $10,000 "America's Best Recipe" contest, and decided we'd help get the word out about this awesome opportunity for those of us who enjoy cooking creatively and could use some cash! 








Cheesy Bacon Egg Boat 

Ingredients:
  • 1 large french bread loaf
  • 5 large eggs (we prefer to use Eggland's Best eggs)
  • 4 strips of bacon, cooked
  • 1/2 teaspoon of black pepper
  • 1 1/2 cups of mixed cheddar cheese, shredded

Directions:
  1. Preheat the oven to 350 degrees (F).
  2. Slice the loaf of bread vertically and split the loaf into two sandwich halves (one top and one bottom). Store one of the halves away for another recipe.
  3. Gently use a spoon to scoop out the middle and create a ditch--be careful to not dig too deep, as you do not any holes in the bottom or sides of the bread loaf (this will help prevent leakage). Toss away the excess bread. 
  4. Crack the eggs into the ditch.
  5. Cover the eggs with black pepper and crumble the pieces of bacon and scatter them all around the loaf of bread and on top of the eggs. 
  6. Bake the loaf in the oven at 350 degrees (F) on the center rack for 15-17 minutes or until you will see that the egg white will turn from yellow to white (i.e. when it is cooked). 
  7. Carefully remove the egg boat from the oven, and sprinkle the shredded cheese all along the edge of the boat. 
  8. Bake the egg boat with the cheese in the oven at 350 degrees (F) for 10 minutes, or until the cheese is melted completely.
  9. Once the cheese is melted, remove the egg boat from the oven.
  10. Allow the egg boat about 3-5 minutes to cook, and then serve. We reccomend using kitchen scissors to trim the egg boat where the egg whites meet (cutting right into the egg yolk will be a bit messy, and you will lose the runny egg). Serve warm and enjoy! Some other toppings we reccomend that you can add on (optional, of course) are freshly sliced jalapeƱo pieces, buffalo hot sauce, red pepper flakes, etc. Enjoy!
