Elkhart Lake Eggs | Baked Eggs with Feta Cheese, Heirloom Tomatoes, and Cilantro

Sharing this savory, egg breakfast recipe inspired by the recent trip we were invited to take to discover and explore all that there is to do and see in the village of Elkhart Lake, Wisconsin! We received this recipe to share on our blog from The Osthoff Resort's head chef during the cooking class we took while we were there. 


At the end of last month, I had a chance to attend my very first cooking class during our first visit out to Elkhart Lake, Wisconsin. The trip out to Wisconsin was great, and the village of Elkhart Lake is definitely ideal for families and couples who want to enjoy a weekend or long weekend getaway near the Milwaukee area. During the trip to Elkhart Lake, I had a chance to go to my first cooking class and now that I have attended one, I have already been searching around the valley to attend another one. It was a great time! This particular cooking class in Elkhart Lake was located at The Osthoff Resort, which is by far my favorite accommodations out of all of the places I got to tour and visit. Within The Osthoff Resort, there is a cooking school located on the property called L'ecole de la Maison Cooking School. Our cooking class lasted a few hours, and we prepared a handful of recipes with some help from the chefs.  Among all of the recipes we prepared and then tasted, this baked eggs recipe they shared with us was my absolute favorite.

These delicate and flavorful eggs are a delicious, hearty way to start the day and are packed with heirloom tomatoes and seasoned with feta cheese and cilantro.
















Baked Eggs with Feta Cheese, Heirloom Tomatoes, and Cilantro

Ingredients:

  • 6 eggs 
  • 4 tablespoons of olive oil
  • 5 garlic cloves
  • 1 red onion, small diced
  • 1 red bell pepper
  • 1/3 of a bunch of cilantro, chopped
  • 1/4 teaspoon coriander, ground
  • 1/4 teaspoon cumin, ground
  • 6 Heirloom tomatoes, diced
  • 1/4 pound of feta cheese
  • Sea salt, to taste
  • Cracked black pepper, to taste

Directions:

  1. In a stainless steel pot over medium high heat, add the onions, peppers, and garlic. Sauté until tender.
  2. Add the spices and stir to combine.
  3. Add the tomatoes, season with sea salt, reduce the heat and simmer for 15-20 minutes, stirring every so often. Add the feta cheese and cilantro and stir together.
  4. Crack the eggs and add them one at a time into the sauce, creating a little divot for them to nestle into. 
  5. Cover the pot and check on the eggs as they cook to the temperature that you would like (i.e. easy, medium, or hard). Crack the pepper over the top.
  6. Dish up by scooping out the eggs and getting as much sauce as you would like. Top with extra black pepper and garnish with cilantro, if you wish! Enjoy!

If you are headed to the Elkhart Lake area of Wisconsin, we definitely recommend taking a cooking class at L'ecole de la Maison Cooking School at The Osthoff Resort! The chefs were knowledgeable, friendly, and supportive of everyones different experience levels of cooking. They offer a variety of different courses that last 4-5 hours, as well as workshops that are last approximately 2 hours.
