Before we enjoyed the lettuce wraps, we prepared these ranch cauliflower bites to enjoy as a weeknight appetizer.
Ranch Cauliflower Bites
Ingredients:
- 1 large head of cauliflower (between 1.5-2.0 pounds)
- 3 tablespoons of extra-virgin olive oil
- 2 tablespoons of unsalted butter
- 3/4 cup of panko crumbs
- 1 1/2 teaspoons of Hidden Valley® Original Ranch® Seasoning Shaker
- kosher salt and ground black pepper to taste (optional)
- fresh parsley to taste (optional)
Directions:
- Prepare the cauliflower by cutting it into 1 1/2 inches florets.
- Preheat the oven to 400 degrees (F).
- Evenly cover a baking sheet with cauliflower florets, and drizzle them with extra-virgin olive oil.
- Roast the cauliflower florets in the oven at 400 degrees (F) for 12 minutes, and then flip them and cook on the other side for another 12 minutes to ensure they are fully cooked through evenly.
- While cauliflower is cooking, melt the unsalted butter in a skillet over medium heat. Once the butter has begun to brown, mix in the panko crumbs and the Hidden Valley Ranch Seasoning Shaker. Cook and stir occasionally until the crumbs are golden brown (it should take between 5-7 minutes).
- Once 24 minutes have passed and the timer is done on the cauliflower, remove them from the oven and immediately top them with the panko breadcrumb mixture. Season the cauliflower even further with salt, black pepper, and fresh parsley. Serve warm and enjoy--they taste great with dips like Hidden Valley Ranch Dressing!
Slow Cooker Crack Chicken Lettuce Wraps
Ingredients:
- 4 boneless, skinless chicken breasts
- 16 ounces of cream cheese
- 1/8 cup of Hidden Valley® Original Ranch® Seasoning Shaker
- 1/2 cup of your favorite hot sauce
- 8-10 pieces of romaine lettuce (or lettuce boats)
Directions:
- Fill a large slow cooker with chicken, cream cheese, and the Hidden Valley Ranch Seasoning Shaker seasoning.
- Cook on low heat setting for 6-8 hours (or cook on high setting for 4-6 hours) until the chicken is fully cooked through. We recommend waiting the full 8 hours on low heat, as this is best for shredding and has the ideal texture for the lettuce wraps (but if you need to speed it up to high heat for a shorter amount of time, that definitely works and tastes great too!)
- Stir the ingredients occasionally while cooking (stir 2-3 times for 6-8 hours, or 1-2 times for 4-6 hours).
- Once cooked, uncover the slow cooker and shred the chicken with a fork. Pour the hot sauce over the chicken and mix it in.
- Wash and dry lettuce, and then fill each piece of lettuce with 2 spoonfuls of chicken. Serve warm and enjoy!
